How to make Eggless Fruit Cake Quickly | Eggless Fruit Cake Recipe

Finally the month has arrived for which everyone waits.yes I’m talking about December,the month of Christmas and new year.especially the month,in which we can have the most favourite cake of every person,the fruit cake or the Christmas cake.
Today I’m going to share the recipe of Eggless Fruit Cake.it’s time to get ready for Christmas celebrations,which is incomplete without fruit cake.more or less everyone starts the preparation to make delicious fruit cake from the 1st week of December.to make the authentic fruit cake,it is very important to soak our dry fruits and our tutti frutti in rum.rum increases the flavour of the cake.we need to chop our dry fruits and tutti frutti and soak it in rum for about 10-15 minutes.after that it will get ready to make.but in India most of the families want to avoid the alcoholic part in their food.so I’m not using the soaked dry fruits.you can make tutti frutti at your house.for that check the recipe of tutti frutti I’ve shared before.
I’m not using eggs in this cake.because I’m going to share the recipe of Eggless Fruit Cake.I’m going to make this Eggless Fruit Cake in gas oven with the help of pressure cooker.you’ll be very happy to see the result.so let’s start our Eggless Fruit Cake.

Ingredients –

  • Refined flour (1 cup)
  • Powdered sugar / castor sugar (1 cup)
  • Curd/ yoghurt (1 cup)
  • Refined oil/melted butter ( 1/2 cup)
  • Milk (1/2 cup)
  • Vanilla essence (2-3 drops)
  • Baking powder (1/2 teaspoon)
  • Baking soda (1/4th teaspoon)
  • Salt (1 pinch)
  • Almond (1 hand full)
  • Raisin (1 hand full)
  • Cashew ( 1 hand full)
  • tutti frutti (1 hand full)

For baking –

  • pressure cooker (5 litre)
  • Cake mould
  • Whisk
  • Spatula
  • bowl stand (metallic)
  • Sand/salt (2cups)

Preparation –

  • to make Eggless Fruit Cake,we need to take our refined flour and shift it into a bowl.
  • Now put 2 cups of sand or salt in a 5 litre pressure cooker.remove the whistle and the rubber band and put a metallic bowl stand in it.then close it.
  • Now heat the pressure cooker in medium flame for about 10 minutes.
  • It will work as a preheated oven.
  • After 10 minutes,switch off the flame.don’t open the lid of the pressure cooker.
  • Now take all the dry fruits (almond,raisins,cashew,tutti frutti) and put 2 teaspoon flour in it.mix them well that the flour can coat all the fruits evenly.Now remove the extra flour(if present)
  • Grease the cake mould well with 2 teaspoon of butter or refined oil.Sprinkle Some Flour and remove The extra by Tapping The mould.

Process-

  1. it’s time to start our Eggless Fruit Cake.for that we need to take 1 cup of curd or yoghurt in a bowl.
  2. Add all the powdered sugar or castor sugar in the curd/ yoghurt.whisk it well till the sugar get mixed properly with the curd.
  3. Now add 1/2 teaspoon baking powder and 1/4th teaspoon of baking soda into the mixture.whisk it well.let it rest for 15 minutes.
  4. After 15 minutes we will see bubbles are forming in the mixture of curd and sugar.
  5. It’s time to add the refined oil/ melted butter,1 pinch of salt and the vanilla essence.mix them with the curd and sugar mixture.
  6. Now finally we will add the shifted refined flour into the mixture.mix it well with a spatula that no lumps can form.otherwise the cake will get heavy.
  7. You can add some milk into the batter if you think the batter is very thick.we don’t need very thick or a thin batter.our batter should be in semi thick consistency.
  8. now put 3/4th of the flour coated dry fruits into the batter and mix them with the whole thing.
  9. Now pour all the batter in The Greased Mould and tap it For 2 times on the Kitchen Surface.It will take the bubbles up.you can remove the bubbles by pricking it with a toothpick.
  10. now sprinkle the extra dry fruits on the top of the batter.
  11. now remove the lid of the preheated pressure cooker and place the cake mould in the cooker very carefully.
  12. again cover the lid and let it cook in a low flame for 40 minutes.after that open the lid and put a toothpick in the middle of the cake to check,if it is properly cooked or not.
  13. If you see some batter Stuck on the toothpick,then cook the cake for another 5-10 minutes.
  14. After that you can take it out of the cooker and let it cool for 30 minutes.now tale the freshly baked cake out of the mould and cut it to serve.
  15. Our Eggless Fruit Cake is ready to serve.serve it to your children,family and friends.they will love to have it.you can serve it to any vegetarian person also because it is Eggless.so enjoy your Christmas and new year with the home made Eggless Fruit Cake.
