There are so many types of dishes made by Brinjal. But mustard Brinjal is a dish which is too easy to cook and takes 15-20 minutes. It goes so well with both rice and roti. You can use any type of Brinjal in this dish. I’m using long sized bringals here they look good. You can also use rings of Brinjal too.i know that many people don’t like Brinjal, for them it will be a delight. I’m sure you will start liking it. So make it to know how tasty is it.

Ingredients

  • Brinjal (8-10 pieces )
  • Mustard paste (1 cup)
  • Popy seeds paste (1/2 cup )
  • Green chili (8-10)
  • Turmeric powder ( 1 teaspoon )
  • Onion seeds ( 1 teaspoon )
  • Mustard oil
  • Salt
  • Sugar

Preparation

  • For preparation of mustard Brinjal mustard paste is a important ingredient.
  • To make a paste take 1/2 cup mustard seeds and soak it for 5 minutes.
  • Now take the soaked mustard seeds into a mixer.add 1/2 teaspoon salt,4-5 green chilies and 1 teaspoon turmeric powder.
  • Now make fine paste of the mixture and take it out in a bowl.
  • now take 1/4 cup of poppy seeds and make a fine paste and take it out too.
  • Now take 1 or 2 Brinjal and cut them into 8-10 pieces.the size will be little big.
  • Now wash them and marinate them with some salt, turmeric powder and sprinkle of sugar.

Process

  1. Now it’s time to start our mustard Brinjal. For that heat some oil In a pan and add the marinated bringal to fry.
  2. Fry them for 3-4 minutes. Don’t let it be too soft tale them out.
  3. Now add some more oil.put 1 teaspoon onion seeds in and then put the mustard paste in.
  4. Add 1/4th cup of water and cook the mustard paste for 3-4 minutes.
  5. Now add the poppy seeds paste and cook it with mustard paste for another 3-4 minutes.
  6. Now add all the whole green chilies in and add salt as per taste and 1/2 teaspoon sugar.
  7. Now put all the fried Brinjal carefully otherwise it will break.now add 1 cup of water and cover the pan and cook it for 5-8 minutes or till the gravy Is thickened and oil comes up.
  8. Now pour 1 teaspoon mustard oil on the dish and cover it for 2-3 minutes.
  9. Your mustard Brinjal or sorshe begun is absolutely ready.enjoy to eat.serve it hot with steamed rice and enjoy it.
